About
Not is Paraschos's ramato-style Pinot Grigio, 100% Pinot Grigio from the Slatnik vineyard on the ponca marlstone between San Floriano and Oslavia. About half the fruit gets roughly ten days of skin maceration in Slavonian oak with wild yeasts while the other half is direct-pressed, and the two are assembled to finish fermentation together. The wine then ages around twenty-four months in large Slavonian oak botti on its lees and is bottled unfiltered (non filtrato). This 2021 carries the Collio Goriziano DOC Riserva designation, which requires extended aging before release.
