
Love this - stylish and delicious. Candied and dried fruits, honey, minerals on the nose. Structured, dry, warm palate with light tannins and notable freshness. Maybe a tad too young; could use a few more years to really open up.
Paraschos's Not is the family's ramato-style Pinot Grigio - 100% Pinot Grigio from the Slatnik vineyard, the ponca marlstone between San Floriano and Oslavia. Half the fruit gets ten days of skin maceration in Slavonian oak with wild yeasts; the other half is direct-pressed; the two are then assembled to finish fermentation together. Aged twenty-four months in larger Slavonian oak botti on fine lees, bottled unfiltered, no SO2 added. The Riserva designation reflects the long aging - Collio Goriziano DOC requires a minimum of twenty months from 1 November of harvest year for white Riserva (wood aging not mandatory); Paraschos comfortably clears that bar. 14% ABV.
