Paraschos Merlot is a single-variety red (100% Merlot) from the Greek-origin Paraschos family of San Floriano del Collio (Gorizia), in the Collio hills of Friuli-Venezia Giulia. Evangelos Paraschos came to the region from Greece, ran a family restaurant, and - inspired by neighbours Gravner and Radikon - started making his own wine in the 1990s; the estate is now worked with his sons Alexis and Jannis. It is labelled Venezia Giulia IGT, the wider regional indication (the back label carries the Italian 'indicazione geografica tipica' wording). The 2019 follows the estate's natural, maceration-driven method: spontaneous fermentation on the skins in open oak vats for roughly four weeks with wild yeasts and no temperature control, then ageing for at least 24 months in Slavonian and French oak of various sizes (barriques, tonneaux, and 25-hectolitre casks). The estate works without added sulfites and bottles unfiltered by free-run racking; this release is marked 'non filtrato' at 13% alcohol. Imported to Ukraine by WineWine.
