
Intense bouquet of buckwheat honey, VA, candied peach. Medium body, nice grapefruit bitterness and completeness. Round, delicious and balanced. The aftertaste is very long. It's more interesting on the palate.
The 2017 "not" is completely different compared to the 2012 "special vintage" release. There is no wow effect (no negative connotation though).
Not is Paraschos's ramato-style Pinot Grigio, 100% Pinot Grigio from 30-year-old vines in the Slatnik vineyard near San Floriano del Collio. The grapes are hand-harvested and destemmed; about half the fruit macerates on the skins for 8 to 10 days while the other half is direct-pressed, and the two are assembled to finish spontaneous fermentation together. The wine then ages around two years in Slavonian oak. Bottled unfiltered (non filtrato). The 2017 is labelled Venezia Giulia IGT.
