Join to read it and the restPonka is the skin-contact white field blend from Paraschos, the Greek-rooted family that has farmed near San Floriano del Collio in Friuli-Venezia Giulia since 1998. The name refers to ponca (ponka), the clay-marl soil of the Collio hills, here the Slatnik vineyard whose old field blend supplies all seven varieties: Chardonnay, Sauvignon Blanc, Tocai Friulano, Ribolla Gialla, Picolit, Verduzzo, and Pinot Blanc. The wine ferments spontaneously on its skins in oak vats without temperature control or added yeast, then ages for roughly 36 months on the lees in large Slavonian oak casks. It is bottled unfiltered ('non filtrato') with no added sulphur. This 2012 was released as Venezia Giulia IGT rather than under the Collio Goriziano DOC that the family uses on later vintages.
