Sassicaia

The 2005 release of Sassicaia - 85% Cabernet Sauvignon / 15% Cabernet Franc, fermented in stainless steel, then twenty-four months in French oak barriques with around a third new. 2005 was a cool, breezy year on the Tuscan coast; slower ripening produced a restrained, mid-weight, classic-styled Sassicaia. Carlo Paoli later called it "a good compromise between freshness and concentration." Earlier-drinking profile than the structured great years.
