More interesting than the base Merlot - deeper aromatics, more acidity and juiciness, fewer stems and less green. From old Merlot vines and five years in Slavonian and French oak, it's a complex, beautiful wine: plum, graphite, flowers, hibiscus. The tannin-acid interplay is superb, the finish long, the fruit lovely, with that same touch of red oxidized apple at the end. Multilayered, balanced - the most serious of the Paraschos reds.
Skala is a red wine from Paraschos, a Greek-rooted family estate at San Floriano del Collio in Friuli-Venezia Giulia, near Oslavia on the Italian-Slovenian border. 'Skala' is the Slovene word for the rocky subsoil of the source vineyards, on gravel and clay around Sant'Andrea, and the wine is a single-variety Merlot bottled under the IGT Venezia Giulia designation. It is made in the estate's natural style: spontaneous fermentation with indigenous yeasts and a long maceration on the skins in oak vats, followed by extended maturation in large Slavonian oak casks and smaller French oak, then bottling by gravity with no filtration. The 2016 back label reads 'NON FILTRATO' (unfiltered), 13.5% alcohol, and 'Imbottigliato all'origine' (estate-bottled) by Societa Agricola Paraschos. This bottle was imported to Ukraine by Бодеґа Прайм (Bodega Prime). Paraschos also makes a separate, longer-aged 'Skala Special Vintage' cuvee that adds a small share of Barbera and Refosco; this standard Skala is Merlot only.
