The Riserva is the white label of Cantina Produttori Nebbiolo di Carema, and it goes back to 1979, when the first one was made from the 1974 harvest. The grapes come from the best-exposed zones of the bowl around the village.
Those vineyards are Carema's: Nebbiolo trained on pergolas over stone and lime columns, terraced up the mountain at the last stop in Piedmont before the Aosta Valley.
On paper the difference from the black label is time. The Carema needs at least two years of ageing, twelve months of them in cask. The Riserva needs three, eighteen months in cask, and the cooperative then gives it a long rest in bottle before release.
Same terraces, a longer wait.
