Join to read it and the restThe Carema cooperative made its name with Carema itself, the village wine that the DOC holds back for at least two years before it can be sold. Paré is how the same growers answer the question of what to drink in the meantime.
It goes out under the wider Canavese DOC, which takes in Carema and sets no minimum ageing. The fruit comes from hillside vineyards, and the wine is made to be drunk young, through a whole meal.
How it spends its few months before bottling depends on whom you ask. The appellation consortium puts it in oak barrels for six to eight months. An Italian wine shop describes steel instead: fifteen days of fermentation in temperature-controlled tanks, five more months in steel and three in bottle.
For a cellar whose reputation rests on patience, it is the one Nebbiolo made not to need any.
