Cool, properly Savagnin in the ouillé register. Nuts, salt, white fruits, a touch of smoke threading through. Good structure, a bit polished, but the salinity and fruit carry the wine into seriously enjoyable territory. Autrement doing what the cuvée name promises - the topped-up 'other way' of Savagnin, against the sous-voile tradition.
Autrement is the domaine's ouillé (topped-up, non-flor) Savagnin - the 'other way' of working the grape in Arbois, against the more familiar sous-voile tradition. Fruit comes from a parcel of older Savagnin on marl, direct-pressed and aged at length in 500-litre used barrels with the barrels kept topped to suppress flor; the cuvée is only made in vintages where Dodane judges the fruit suited to it. 2020's warm season pushed the wine to 13.8 percent, but the long, reductive élevage holds it on citrus, white flowers, and a chalk-driven, faintly almond finish rather than the curry-and-walnut profile of vin jaune-style Savagnin.
