Properly polished, but a touch too creamy for my register - the texture drifts into almost cloying. Meringue and lemon tarte on the palate, with a hint of residual sweetness. Tasty and well-made, just not the precision-cut Saint Pierre I tend to lean toward.
Les Brûlées is a single-parcel Arbois blanc, 100 percent Chardonnay from a limestone-dominated site near Mathenay farmed biodynamically. Direct press, native yeast, and long élevage in used barrel under ouillé produce a dense, textured white with chalky grip and a saline, faintly nutty finish - oxidative character is restrained rather than featured. 2020 in the Jura was a warm, early vintage; here it reads as ripe Chardonnay still held in check by the site's mineral cut and Dodane's low-sulfur, neutral-wood handling.
