Join to read it and the restLes Ammonites is a parcel selection of Chardonnay grown on fossil-rich marl, the ammonites in the soil giving the cuvee its name. Gently pressed and left to settle, it ferments spontaneously on indigenous yeasts and spends around 18 months in older barrel, kept topped up (ouillé) to stay fresh rather than oxidative. Malolactic finishes in barrel, and the wine is bottled unfined and unfiltered with little to no added sulphur.
