Join to read it and the restFrom the Campiani di Cellatica hills at the eastern edge of the Franciacorta zone, at Brescia's doorstep: micro-zoned steep south and southwest slopes at 350-400 m, clay with abundant limestone, 7,000 plants per hectare, and the constant wind the estate is named for (Cà del Vént - "house of the wind" in the old cadastre). The estate left the Franciacorta DOCG after the 2015 tasting commission rejected six of its wines as nonconforming; since then the sparkling wines are bottled as VSQ under the house Pas Operé protocol, farmed without tilling and with spring-water preparations (VinNatur member).
Revolution 2012 is 77% Chardonnay macerated one night on the skins and 23% direct-pressed Pinot Nero - per the producer, the assembly of the twelve most mineral, sapid base wines of its crus. Gravity decanting, native yeasts, 7 months in barrique with spontaneous malolactic, no fining, stabilization or filtration; tirage on grape sugar; 93 months on the lattes. Disgorged 12.01.2021 pas operé - topped up with wine of the same lot, no liqueur d'expédition - 1,030 bottles in this tranche of 4,583 (earlier tranches of the same lot were disgorged from 35 months onward). Bottled 04.04.2013.
2012 in the Brescia hills: a prolonged green-growth phase, then no rain from late May to late August - low yields, shriveled berries, and the acidity the label analysis confirms (total acidity 7 g/l, pH 3.2, 1.3 g/l sugars, 20 mg/l total SO2). 12.5%.
