Ooof. Sospiri! How happy I am to experience this wine again. Contrary to the previous wine, this one is demanding and sophisticated. Expressive bouquet of baked apples, buckwheat honey, Jerez, mushrooms, fresh buckwheat bread, and subtle hints of pickles (boy, it only adds complexity). Almost perfectly balanced, voluminous and persistent. Bravo.
75% Chardonnay, 25% Pinot Noir.
Sospiri is an incredible traditional sparkling with a unique and expressive style. It bursts with baked apples, buckwheat honey, tilia, Jerez, pickles, mushrooms, and freshly baked buckwheat bread. Medium-high acidity, almost perfectly balanced, and the aftertaste is long, evolving and flavourful with a nice VA touch in the finish. It's like drinking cider mixed with Champagne, Jerez and medovukha. An explosion of emotions, complex and delicious.
