Properly clean, almost sterile in the precision - the kind of wine that announces its discipline before it announces its flavor. Pencil shavings, apricot jam, dried herbs lining up in formation. Filigree on the palate, long and multilayered, drinking so dry it reads like eating pencil shavings. Tasty - but the precision is the whole story, and it's a hell of a story.
100% Ribolla Gialla from Joško Gravner's Oslavia estate in the Collio (Friuli-Venezia Giulia, on the Slovenian border). Skin-contact white fermented and aged in buried Georgian terracotta amphorae before extended cask ageing - the technique Gravner pioneered for his Friulian whites. Bottled July 2023, 14% ABV.
