Tasting Notes
Experiencing this wine is truly mind-blowing. Its age is elusive, with both the color and palate providing misleading cues. After decanting, it surprisingly reveals a youthful character. This could be due to a blend of factors: the specificities of a less-yielding yet more concentrated vintage, the inherent characteristics of the Pignolo grape, and undoubtedly, the skill of the winemaker.
The bouquet is detailed, nuanced, and elegant, featuring an intriguing mix of mint oil, wormwood, tar, perche, grilled meat, medicinal herbs, and black currant jam. The presence of VA adds to its complexity and is so ideally integrated that it enhances rather than detracts from the overall experience. The palate is intense, long, and continuously evolving, showcasing the wine's multifaceted nature and exceptional crafting.
About
Produced only with local red grapes, fermented on the skins in wooden vats, with wild yeasts and no temperature control. After the drawing off and pressing phases the wine was aged in oak barrels for four years. Bottled during a waning moon without fining or filtration.
