
More VA than the 2019, and the herbs lead from the first sniff - calendula, then potato soup with a heavy hand of black pepper. Nice, but I miss the structure the 2019 has; this 2018 plays wilder and less defined. As it opens it rounds out and picks up a soft sweetness, which helps.
The 2018 release of Disobedience, Mythopia's Chasselas skin-contact white in the Thoreau-named cellar line. Chasselas 100%. Whole-bunch skin maceration in airtight steel; this 2018 was bottled in August 2019, a notably short elevage compared with later Disobedience releases. 12% ABV. No SO2, no fining, no filtration.
