
Miso soup, uzvar, smoke, ya'an cha, a swipe of mint - the orange Sylvaner unfolding in layers. Concentrated, rich, properly complex. The acidity has softened, but it reads as approachability rather than fade. Soft tannin, long finish, a touch of sweetness on the palate that stops short of plush. The kind of skin-contact white you keep coming back to.
Not a fan of this winery - barrel-by-barrel bottling with zero sulfites makes it an utter lottery for quite a price tag. But this bottle was really nice. Calm, settled, surprisingly composed. The oxidation is aggressive but deliberate (unoaked barrels left without topping up for years) - and the wine is alive and kicking despite it. Miso soup, uzvar, smoke, ya'an cha, mint. Super concentrated and rich, complex. Acidity a bit tired, but it makes the wine more approachable rather than weaker. Soft tannin, lengthy aftertaste. One of those bottles that justifies the lottery ticket.
Finito is the orange Sylvaner Schmidt makes from the last day of harvest each year - old vines, tiny volume, sometimes only one barrel produced. Whole-bunch skin maceration in airtight steel for around six months, then four to five years in old, neutral oak. Deep skin-contact colour. By his own framing, probably the best white he makes. 12% ABV. No SO2, no fining, no filtration.
