A re-tasting of the d2022-3T - same wine, same austere medicine-and-mineral register I had a few weeks ago, holding shape. Iodine and salt over a quiet baked-apple core, a flicker of crushed-apple-seed bitterness on the finish. The mousse stays delicate, the acidity stays honest. Not a wine that performs - one that just is what it is, bottle to bottle. Excellent on its own Oltrepò terms.
Bandages, yellow fruits, oxidation. Fresh, bright, impossible to guess blind. Crushed apple seeds, a touch of baked apples. But this wine isn't about fruit - it's about medicine and minerality. The earlier d2023-1T release leaned smoked butter and honey whispers; this one is more austere, more pharmacy, more pure. The mousse behaves like a well-trained butler, the acidity keeps everything honest. Not trying to be Champagne, just being excellent Oltrepò - and competing on its own terms. Beautiful wine.
Bertè & Cordini's flagship NV metodo classico from Oltrepò Pavese. 85% Pinot Nero with 15% Chardonnay. Soft, progressive pressing, white-method vinification, primary fermentation in stainless steel at 18°C with selected yeasts. Tirage in bottle, 24 months minimum on lees, then 3 months post-disgorgement rest before release.
Specs: 12.5% ABV, Extra Brut (residual sugar under 4 g/L), total acidity 6.5 g/L, pH 3.2.
Disgorged in the third trimestre (Jul-Sep) of 2022 - the bottle carries '3T/22' as the disgorgement marker ('T' for trimestre, paired with the two-digit year).
