This was served blind, and at first the nose had me thinking it was an older Champagne - heavily oxidative, full of dried apple, honey, a bit of cooked onion, and some bitter herbs. But on the palate, it didn't quite align - lacking the depth and volume I'd expect from Champagne.
Still, it was bone-dry (despite the declared 7g), with pinpoint acidity and a nice salty edge, so I guessed northern Italy. To be fair, the bottle seemed to have aged unusually fast, which likely shaped the whole impression. Still great experience.
