Join to read it and the restA Chardonnay from the Bourgogne Hautes-Côtes de Beaune appellation, the high ground that rises just west of the Côte d'Or proper. The label reads Au Bout du Monde, French for the end of the world, an informal name Pierre-Yves Colin-Morey gives to a set of parcels he took on in 2014 on a remote, very steep limestone-clay hillside that sits among the coldest sites he works. The fruit is fermented with native yeast and raised in the domaine's signature 350-litre demi-muid barrels, around ten percent new, for roughly fourteen months, followed by about three months in stainless steel, then bottled unfined and unfiltered. It was elevated and bottled by Pierre-Yves Colin-Morey at Chassagne-Montrachet, and imported to Ukraine by Wine Bureau.
