Spumant Viu Chardonnay Brut

Vinum Estate says the style is older than Champagne, and leans on that. It presents pét-nat as a forgotten recipe brought back, and gives it a name of its own: spumant viu, living sparkling wine.

Very little is done to it. The first fermentation takes place in the bottle. Vinum filters nothing, adds no sulphites, sugar or yeast, and puts the wine's sulphite content at almost zero.

The grape is Chardonnay. Vinum says it sources Chardonnay from colleagues; it does not list it among the varieties it grows.

Vinum calls the 2024 handmade and a limited edition of 351 bottles. The 2025 gives the same figure.
