Seems my expectations from trying this fresh off the truck four months ago were misplaced. Not bad, just… unfocused and all over the place. Spoiled lemon, meringue, overripe yellow fruits, sea spray - sounds intriguing on paper, but nothing connects. Like someone mixed three different wines in one glass and they refuse to emulsify. Some saltiness, some creaminess on the palate, but no integrity holding it together. Disappointing from Envínate. Expected better.
100% Pardillo, spontaneous fermentation, no temp control, concrete and barrel - and somehow it all just clicks. The bottle was just off the road, but already showing well. It's a bit of a crowd pleaser, sure, but not in a boring way. Lemon, meringue, sweet yellow fruit and sea spray. Round and slightly creamy on the palate, yet marked by a pleasing saltiness. I need to check it again in the future.
