This is really nice, though maybe not entirely my style. Three years post-disgorgement have given this bottle time to settle and broaden considerably. Canned pineapple and coconut chips lead the way, backed by brioche, spices, a touch of honey, green apples, lemon, and that classic chalk.
Good concentration throughout, with a long, flavourful finish that keeps giving. The only tension: it's a bit too mellow on the palate for my usual preferences, though there's real mineral backbone running through it simultaneously - almost contradictory, but somehow it works. Fun, delicious, genuinely complex. Not the style I'd actively seek out, but objectively well-executed and thoroughly enjoyable.
Aromas of iodine and green apple are immediately evident, accompanied by hints of cider and a subtle touch of caramel. On the palate, it presents as fresh and round, with a slight sweetness that is well-balanced. The finish is long and vinous, showcasing neat citrus and cider notes. A pleasant minerality is also present, adding to the overall complexity.
