L'Échappée Belle - the name is a French phrase for a great escape - is Calsac's flagship Blanc de Blancs, built entirely from Chardonnay grown on the chalk. The fruit is a selection of his chalky terroirs across Champagne: Montgenost, Bisseuil, Grauves and Avize.
It is made the way he makes everything: spontaneous fermentation with native yeasts, malolactic carried through, and no filtering. After about three years on the lees it is finished as an extra-brut with a barely-there three grams of dosage, leaving the chalk and citrus to do the talking. Precise, mineral and chalk-driven.
