This Riesling is truly exceptional, capturing attention with its unique and lovely bouquet. It combines the intriguing aromas of sardines and grilled lime with oil, peaty undertones, and beeswax, creating a scent profile so captivating that it evokes the desire for a perfume that mirrors these aromas.
On the palate, this wine excels with its crisp acidity and notable concentration, alongside a distinctive salty palate enriched by a fizziness reminiscent of slightly tired mineral water (Polyana Kvasova?). The addition of a butter-like texture brings a harmonious balance to the overall experience.
This wine is complex, and multilayered, and persists impressively, showcasing its depth and versatility.
Perched 185 meters above sea level, this Riesling is cultivated from 35-40-year-old vines. The vinification journey begins with an initial maceration period of 5 days in qvevri, followed by a second phase of semi-carbonic maceration, extending over 12 months and involving 12% added berries -- meticulously selected 1-2 berries per vine -- to enrich the wine's body and depth. The wine then matures for 12 months in old oak barrels of 600 litres. Bottling is carried out without filtration or fining, staying true to the wine's authentic essence.
