This wine starts off with a peculiar and humorous nose, presenting a mix of nail polish remover and sewerage. However, as it opens up over time, the initial sharpness gives way to more inviting aromas like ginger cookies, apple jam, and a blend of smoke with dried herbs. Despite its unorthodox start, the wine reveals a simplicity that becomes its charm, showcasing a roundness and ease of drinking. It is a good choice for a casual, relaxed setting.
Nestled at an altitude of 180-200 meters above sea level, this wine is born from vines approximately 60 years old. The vinification process embraces the art of spontaneity with natural fermentation, devoid of temperature control, and includes a method of semi-carbonic maceration that spans 7 days in qvevri, with a notable 25% of the batch fermented with stems. Following fermentation, the wine is aged for 16 months in seasoned acacia barrels of 700 litres.
