The vinification process embraces the art of spontaneity with natural fermentation, devoid of temperature control, and includes a method of semi-carbonic maceration that spans 7 days in qvevri, with a notable 25% of the batch fermented with stems. Following fermentation, the wine is aged for 16 months in seasoned acacia barrels of 700 litres.
