Éphémère is a numbered series of one-off Champagnes: each edition is bottled once, given a number, and never repeated, so when an edition sells out the wine is gone for good. The project was conceived in 2014 by Frédéric Savart with four friends, with first releases reaching the French market in 2019, and the wines are elaborated with Drémont Père & Fils, a small family house at Sillery whose négociant-manipulant matriculation, NM-717-001, appears at the foot of this label. The series is described by its importer as holding no vineyards of its own, buying fruit or finished wine from selected growers - which is what négociant status permits and estate bottling would not.
Most editions carry Savart's name alone. This one is a collaboration: the trade describes Edition 029 as marking the project's seventh year, with Alexandre Chartogne of Chartogne-Taillet joining Savart as co-selector, and both names appear on the front. The back label sets out the wine: a Blanc de Blancs from the grand cru villages of Avize and Cramant in the Côte des Blancs, disgorged in October 2025, dosed at 3.5 g/L as an extra brut, 12.5%, with 9,988 bottles made. Merchants give the base year as 2022; the bottle itself is declared without a vintage.
The back label also carries the project's own summary of the idea - Éphémère is a rigorous selection meant to bring confidential cuvées to light. Worth being precise about what that means, since the front puts two well-known grower names on a bottle neither of them produced: Savart and Chartogne selected this wine, it was elaborated at Sillery, and published sources do not define how far the collaboration went beyond selection.
