Edition 031 of Éphémère is the first collaboration between Frédéric Savart of Écueil and Jérôme Prévost of La Closerie at Gueux, two growers from the Petite Montagne de Reims. As with every Éphémère, the wine was elaborated by Drémont Père & Fils at Sillery; this time the selection was made by the two of them.
The fruit is grand cru Chardonnay from Avize, from 2016, left on its lees for nearly nine years and dosed at just 1 g/L. It is made in very small quantities; the producer gives no bottle count, though one retailer says 2,500. Like every Éphémère, 029 included, it is a one-off edition that will not be made again. For Prévost the village is familiar ground: he made his first wines in Anselme Selosse's cellar at Avize before moving production home to Gueux.
