Ombra Cuvée Brut Magnum (d2020-01)

Ombra is the earlier identity of Nicola Gatta's entry-level 30 lune bottling - the shortest-aged wine of an estate that counts lees time in lunar cycles, thirty of them here, about two and a half years. The blend is 80% Chardonnay with 20% Pinot Nero from limestone hills around Gussago and Cellatica, the Pinot Nero drawn from the second pressing of the fruit that goes to the rosé, and each release built on roughly 85% of the current vintage topped up with 15% of the previous one. Spontaneous fermentation with indigenous yeasts, refermentation in bottle, no fining, no filtration, no added sulphites, and no appellation claimed - Vino Spumante by choice, though the vineyards sit at Franciacorta's eastern edge.

The name has since left the range. The estate sells its 30 lune wine today as Cuvée Nature at zero dosage; it is the same wine line renamed, and the producer still refers to it as "my Ombra". The Ombra presentation carried a real dosage, and it moved: 5 g/L on the 750 release, 7 g/L in this magnum.

This is the magnum, disgorged January 2020, with 37 mg/L of total sulphur - none of it added.
