A serious Pinot Noir. Charged for long life. Ripe and complex bouquet: dried cherry, forest berries mix, Borodino bread (even porter beer notes), leather, underbrush, and dried flowers. Medium+ body with grippy tannin and medium acidity. The aftertaste is long, sticky and mineral. Neat stuff.
Parabole is a Grand Cru made from low-yield old vines growing on loess loam soil over volcanic rocks. Open mash fermentation with whole grape content, spontaneously fermented and foot tamped, unfiltered, no fining, no pumping.
