The cellar work aims at freshness: destemmed fruit gets a short cold maceration, the must settles naturally and ferments at a controlled 16-18 C, then the wine spends four months on the fine lees in stainless steel. The sheet lists 2.4 g/l of residual sugar against 6.1 g/l of acidity, with elderflower, exotic fruit and gooseberry as the house's own aroma markers and a juicy, saline palate as the stated intent.
The 2025 season in Alto Adige ran early and even - mild spring, fast flowering, a cooler July with well-spaced rain, then a dry, warm early August - though September rains made the compressed harvest a demanding one. The consortium calls the vintage precise, salty and elegant, singling it out as an outstanding year for Sauvignon Blanc specifically.
