Tasting Notes
Simply lovely. This wine has mellowed over time, revealing delicate notes of red flowers, red berries, spices, and underbrush. It's fresh and nearly seamless, with pleasantly unobtrusive tannins that add volume without heaviness.
I served it blindly in completely opaque black glasses, and two guests managed to guess macerated Pinot Grigio, with one even identifying this exact wine. Bravo!
This wine is indeed beautiful, featuring a sophisticated bouquet of red flowers, red berries, and peaches, with a hint of volatile acidity (VA). It boasts good acidity and juiciness complemented by pleasant tannins. The aftertaste is long, and the balance is nearly perfect. Although obviously too young, it is already delicious and shows great promise for further development.
This is going to be more opinionated than I'd love to admit, but I enjoy this wine so much that I can't help but praise it. Aye, maybe it's not the most complex wine of the evening. But the delicacy and cleanliness is incredible. A lovely bouquet of barberry candy (haha, an easy bribe for me), peonies, hibiscus, white pepper and wet wood. The fruit is so good, this Sivi tastes like barberry candy. Round, delicious, sophisticated and quaffable.
About
Sivi means "grey" in Slovenian and is a synonym for Pinot Grigio, a reference to the grape colour. The 2021 Sivi is destemmed and fermented with natural yeasts in oak vat, with no temperature control and no sulfur. Maceration lasts for 10-14 days. After a gentle pressing, the wine is put in 3500-litre Slavonian oak barrels for a year and a half on its lees.
