A fun rosé, and good that it isn't all glycerine, with the pinkness kept in check. Red currant and cornelian cherry over a chalky streak, neat structure, crunchy acidity, a long finish. A varietal Pinot Noir Cava by the traditional method, brut - it just wants to be drunk, no buts. Not complex, but lovely.
Ardea Col·lecció Rara Avis is a non-vintage rose Cava made by U Més U Fan Tres (the Catalan house 1+1=3, 'U més u fan tres') in Font-Rubí, in the Alt Penedès. It is a varietal Pinot Noir produced by the traditional method, with the second fermentation and lees aging taking place in the bottle, and finished at a brut dosage level. The fruit is organically farmed and the wine carries the D.O. Cava seal for the Comtats de Barcelona zone. 'Ardea' is the genus of herons, echoing the bird on the bottle's Rara Avis Col·lecció roundel. Retailers describe roughly fourteen months of bottle aging, though the bottle's own D.O. Cava seal shows the entry Guarda tier.
