Join to read it and the restThe rosé of the Cygnus range, U Mes U's quartet of traditional-method cavas named for the swan constellation that the house says accompanies its pre-dawn harvests - Giennah is the orange giant among its stars, picked for the pinkish glow it gives off. It is a non-vintage Cava DO from the Comtats de Barcelona zone, Valls d'Anoia - Foix subzone, carrying the green Guarda band.
The blend is Garnacha with Pinot Noir - 85/15 per the producer's page and tech sheet - from vineyards in the upper Alt Penedès around Font-Rubí at an average of 350 m, farmed under the house's CCPAE organic certification; the wine is also vegan. The base wine sees a brief skin maceration at 15 C inside the press, only free-run juice goes to fermentation at 16-17 C, and the varieties are blended before the second fermentation in bottle. The producer's own materials do not quite agree on the lees time - the tech sheet says 12 to 18 months, the site a minimum of 15 - but either way it sits comfortably past the nine-month Guarda minimum. Dosage is 8 g/l, landing it at the sweeter end of brut.
