Les Vaudayants is Georges Remy's still red, a Coteaux Champenois Bouzy Rouge from the old still-wine tradition of a village far better known for Pinot-heavy Champagne. It is a single-parcel wine: 100% Pinot Noir from the Vaudayants lieu-dit in Bouzy, organically farmed and hand-picked on 11 September 2022. Fifteen days of maceration in 500-litre barrels, then seventeen months of élevage in cask, bottled in February 2024 without fining or filtration - just 2,625 bottles. At 12% it is a pale, cool-climate red built on Bouzy's chalk, red-fruited and savoury rather than powerful: the still face of the Bouzy Pinot Noir the estate is built on.
