Ramisco is the red grape of Colares, and the old local wisdom held that a Ramisco could only be drunk ten years on. Ramilo make theirs to open earlier. The bunches are destemmed, trodden by foot in a lagar and fermented with their own yeasts for about a week; the 2020 then spent two years in French oak and was bottled unfiltered.
From 2015 Ramilo made a single barrel of Colares Ramisco a year. With the ungrafted vineyard the family replanted in the sand in 2014 coming into crop, production grew from 2020, and 660 bottles of this wine were made. As the winemaker Jorge Mata puts it, anyone who likes Ramisco with some age can always leave the bottles in the cellar.
