Thomas Perseval is a small organic grower in Chamery, a Premier Cru village in the Petite Montagne de Reims. He took over his parents' vines in 2003; an internship at an organic estate in Saint-Romain, Burgundy, converted him to organic farming, certified since 2012. The domaine is tiny - about two and a half hectares across six parcels, each vinified on its own - and planted to Pinot Noir, Meunier and Chardonnay alongside the near-forgotten Champagne varieties Petit Meslier, Arbanne and Pinot Blanc. The wines are zero or low dosage, clear and parcel-driven.
