England keeps doing things right on the sparkling front, and this one fits in nicely - the natty edge suits it. The nose is fresh and floral: white blossom, ripe cherry, green apple, with a pear-skin pinch underneath. Palate holds the line - lemon (more zest than juice), gooseberry tang, yellow cherry, knife-edge acidity, and that English-coast brininess sitting on a chalky frame. Short on the finish is the only knock; otherwise it's good quality and a direction I'd happily follow further.
A field blend from a single two-hectare vineyard at Botley's, slowly pressed and co-fermented in old barrels with indigenous yeasts. Eleven months in barrel before tirage with the biodynamic Champagne Fleury yeast. Disgorged January 2023. Zero dosage, zero sulphur, unfined and unfiltered. Chalk and limestone soils. 11% alcohol.
The four traditional Champagne varieties Hugo planted on the chalk - Chardonnay, Pinot Noir, Pinot Meunier, Pinot Gris - co-fermented as one vineyard rather than blended after the fact.
