A field blend from a single two-hectare vineyard at Botley's, slowly pressed and co-fermented in old barrels with indigenous yeasts. Eleven months in barrel before tirage with the biodynamic Champagne Fleury yeast. Disgorged January 2023. Zero dosage, zero sulphur, unfined and unfiltered. Chalk and limestone soils. 11% alcohol.
The four traditional Champagne varieties Hugo planted on the chalk - Chardonnay, Pinot Noir, Pinot Meunier, Pinot Gris - co-fermented as one vineyard rather than blended after the fact.
