Melon de Bourgogne on a filtering clay topsoil over orthogneiss and quartz, from old vines. The estate has farmed organically since 2002 (Ecocert) and biodynamically since 2011 (Biodyvin); the winemaking is low-intervention - wild-yeast fermentation, no malolactic, and bottling unfined and unfiltered.
Haute Tradition is the long-elevage cuvee: first-press juice only, then around 18 months on fine lees in old truncated-cone (tronconique) oak vats, with no new wood. Dry, 12.5% abv.
