This wine showcases a charming bouquet, characterised by a pleasing simplicity rather than complexity. It features notes of red fruits, dried red flowers, a hint of graphite, and spices, predominantly black pepper. Despite the presence of somewhat green tannins, the wine maintains a commendable balance and boasts a relatively delicate medium body. While the craftsmanship behind it is evident and appreciated, the overall experience falls short of being genuinely pleasurable to drink. Maybe the bottle needs a few years of ageing.
Munjebel CS is one of the few "grand crus" of the estate. The grapes used to make this wine come from an ungrafted vineyard located in the Chiusa Spagnolo section of contrada Zottorinoto. This unique vineyard was planted around 1925 and is situated at a lower altitude (620m. asl) surrounded by lava. The wine produced from these grapes is profound, and tannic.
The grapes are destemmed and lightly crushed before being fermented using only indigenous yeasts. The wine is then left to ferment with skin contact for approximately 50 days. Once fermentation is complete, the wine is aged for 18 months in neutral epoxy tanks of varying sizes ranging from 1500 to 2500 litres.
