Interesting to taste this pet-nat with some age on it. Fun, and the sweetness I remembered from the early release is almost gone now - what's left reads more fizzy than truly sparkling. Good acidity, proper volume, a fistful of fermented berries with a bit of hair-spray funk threading through. Actually really delicious. Better with the years on it than I would have guessed.
I am not a fan of pet nats. But I could not miss a bottle of Cascina Tavijn. When I poured Monstro as a welcome drink, some people looked like the character from the label. Straightforward bouquet and palate. A fistful of fermented berries mixed with hair spray. Relatively funky and a bit too sweet for my taste. Fun to drink, at the very least.
