·@ChișinăuUnderstanding all the challenges, I still wish more local winemakers would experiment with the traditional method - lower dosage, longer lees ageing (over a year). Because something good does come out of it.
This wine has an intense and beautiful bouquet - honey, nuts, baked apples, and a touch of cider. The acidity is good - could be better, but it does the job. The flavour evolution is intriguing: it starts off strong, dips into a soft sweetness, then re-emerges with notes of nut husk, buckwheat honey, and roasted fruit. Interesting, and seriously tasty.
