Éclat

Éclat is Epicrama's traditional-method sparkling, made entirely from Feteasca Albă - the native Moldovan white rather than the Champagne varieties a young sparkling project might reach for by default. Sergiu Stradnic and Cristina Herța-Stradnic planted the vineyard in 2020 at the top of Stăuceni, a few kilometres out of Chișinău in the Codru hills, on what the estate calls a 45 degree hillside, and farm it on the cultura promiscua principle: vines sharing their ground with cover crops, bees and geese instead of standing in cleared rows.

Second fermentation is in bottle. The 2023 finished at 12% with 10 g/L of sugar, at the sweeter end of brut, and went to bottle in June 2024 as lot 01.
