Annamaria Clementi is a blend of 82% Chardonnay, 3% Pinot Blanc, and 15% Pinot Noir. The Chardonnay comes from 16 vineyards averaging 36 years of age, located in the municipalities of Erbusco, Adro, Corte Franca, Iseo, and Passirano. The Pinot Blanc is sourced from 2 vineyards, with an average age of 30 years, in Passirano. The Pinot Noir is derived from 7 vineyards, averaging 31 years of age, situated in Erbusco, Iseo, and Passirano.
The grapes are hand-harvested and placed in small crates to ensure pristine condition. After manual selection, the clusters undergo a proprietary "berry spa" treatment - a whirlpool-like washing process in three soaking tanks - followed by careful drying. The base wines are produced exclusively from free-run juice, ensuring exceptional purity and finesse.
Alcoholic fermentation occurs in small oak casks, where the wine matures on its lees for six months, during which malolactic fermentation also takes place. Gravity flow is employed to transfer the wine from barrels to the blending tank using specialised flying tanks, maintaining its integrity throughout. The wine then undergoes an extended period of lees ageing, lasting over 8 years, to develop its complex sensory profile.
Disgorgement is conducted in an oxygen-free environment to prevent oxidative stress and eliminate the need for additional sulphites, preserving the wine's purity and longevity.
