Light red in colour, the way a proper Sivi should look. The VA leads on the nose but doesn't bulldoze - underneath there's rhubarb, miso, herbs and cacao all in proportion. Light, zesty, mineral. Just fun to drink without thinking too hard about it.
Sivi is Dario Prinčič's single-variety Pinot Grigio bottling - "sivi" means grey in Slovenian, riffing on the gris in Pinot Gris. The fruit comes from sixty-year-old vines on steeply terraced Oslavia soils. Of Prinčič's whites, Sivi sees the shortest skin maceration: around seven days, against the 20-25 days the Ribolla, Jakot, and Trebež get.
Hand-harvested, spontaneous fermentation with indigenous yeasts in open-top chestnut vats, then around thirty months in old French oak tonneaux plus a brief steel pass before unfiltered bottling. Minimal sulphur (added only at bottling). Colour runs dark pink-amber rather than the usual pale Pinot Grigio. 13.5% ABV.
2020 in Collio opened dry, with a strong Bora wind through stunted budbreak; the cool, wet stretch came in June and July; warm August with timely rains refilled water reserves and allowed extended hang time into harvest. Pinot Grigio picking began around 22 August.
