Retsina

Retsina is a method rather than a place: an EU-recognised traditional appellation exclusive to Greece, covering wine whose must is treated with Aleppo pine resin before fermentation. It can be made anywhere in the country. Fifteen Retsinas carry a protected geographical indication, all of them in Attica, Boeotia and Euboea, and this is not one of them - the label claims the traditional appellation and nothing narrower.

Cavino gives the wine as Roditis 100% and the fruit as coming from the Achaia wine zone; the company itself sits at Aigio. The producer describes careful collection and handling, the must settled for six hours, and alcoholic fermentation with selected yeasts at low temperatures, with fresh Aleppo pine resin added at about 0.2%. The Ukrainian importer sticker puts the resin at about 0.3%; the two figures differ. Dry at 11%, with 2 g/L residual sugar per the importer's panel. Bottled on 24 January 2025.

Cavino makes a second Retsina under its Sophias label, from Savatiano rather than Roditis.
