Valdobbiadene Prosecco Magnum

The estate's signature col fondo: a Valdobbiadene DOCG sparkling refermented in bottle on its own lees, undisgorged, intentionally cloudy. Majority Glera with a complement of Verdiso, Perera and Bianchetta from old hand-tended plots. The must sees two days on the skins, ferments spontaneously in cement, rests through winter without fining or filtration, and re-ferments naturally in bottle the following spring. In magnum, the larger format slows lees autolysis and gives the wine a longer, calmer second life.
