The Chardonnay spends six months in foudre before blending. The house adds 15% reserve wine, and the wine then spends at least three years in the cellar.
The recipe moves a little from one release to the next, and the Pinot Noir share is given as 65% on average. The house quotes a dosage of 5.6 g/L, low enough to count as extra brut, though this release is labelled brut.
The house calls it a limited edition of 4,000 bottles, from the one village in Champagne with three appellations to its name.
