A skin-macerated Riesling from the Carrière lieu-dit above Rouffach, named for the sandstone quarry it sits below - marly sandstone, more quartz than chalk, facing due east. Jean-Pierre Frick has farmed biodynamically since the early 1980s, and this is one of his 'Pur Vin' bottlings, made with no added sulphur at any stage. Whole bunches macerate about nine days before pressing, then the wine rests ten months on its fine lees in century-old oak foudres. Lightly filtered, unfined, bottled without sulphites. Dry, textured, and a long way from a conventional Alsace Riesling. 12.5%.
