Following the Francis Egly wines, choosing something meaningful was a challenge, but the Chablis by Alice and Olivier De Moor proved to be a solid pick. Again.
It features a vibrant mix of lemon curd, Jerez, baked apple, cream, and smoke. The wine is intense yet fresh, round, and delicious, culminating in a long and flavourful aftertaste. Its saline quality and complexity add depth to the experience, making it a standout choice that holds its own after an impressive lineup.
Tasting this wine after a set of Première Cuvée by Bruno Paillard. And I must admit, it was a good idea. Lemon curd, Jerez, baked apple, cream and smoke. Fresh, round and delicious (IMO atypical) Chablis with a long and flavourful aftertaste.
